George Castro’s Homegrown Mexican Dishes in the Philippines

I love Mexican food and I started craving for since I moved back to the Philippines. I lived in Arizona for a while and I am very fortunate to tried great Mexican food. I have also met a few food friends along the way. I moved around from Queen Creek, South Phoenix and Chandler to name a few. A lot of people who lived in Arizona moved away in search of greener pastures. Some of my AZ friends are now currently in South Korea, Philippines and around the world.
But I do have one AZ local currently residing in the Philippines. Legendary coach George Castro moved all the way from Tucson, Arizona, hundreds of miles across the Pacific to the tropical city of Manila to train Brandon “The Truth” Vera. We became good friends and he invited me to try out his homemade Mexican dishes inspired by his mom. This got me excited since I love Mexican food and I stayed in Arizona where we have a large Mexican-American community.
I went all the way to “Flying House” in Quezon City where the owner allowed George to create his Mexican dishes and share it to the public. This caught me off guard since I never knew that this gentle giant who could eat me for breakfast can cook! I arrived with the rest of the bloggers who were also eager to try some authentic Mexican dishes. Finally done by a Mexican.

Today, he is not Coach George Castro but Chef George Castro. He introduced one of mom’s homegrown dishes. The first up would be the Tacos. We were given 3 Tacos made with Flying House’s Signature Black Tortilla. You can choose from pork, beef, and/or chicken. It can be mild or spicy. Trust me, fam. I know my Mexican food and the Tacos were outta this world that I asked if we could have more!

Next up was the “Baked Nachos”. I really missed the Nachos from the states so my expectations was really high on this dish. I tasted it and it tasted; just like home. The Extra Nacho Chips topped with Mexican beef and cheese just killed it!

I had to flush it all down somehow. I didn’t have my Corona so I took the next best thing: Michelada. Now this is a traditional Mexican drink made with beer, tomato juice, lime and tabasco. It tasted so damn good.

The rest of the bloggers enjoyed the meal and still can’t believe that the man trains fighters to hurt people in ring for a living; is a genuine, huggable and funny kind of guy. The man looks a killer, but the man go soft gentle heart but if you need a great trainer: George Castro is up for grabs. Before leaving, I had to ask Coach one question. I said, “Coach, what is your favorite Filipino dish? He said it sound and proud: KALDERETA!
What a great man this guy is. =)

- George Castro will be opening up his own gym called “Alliance Training” soon in Manila complete with top of the line gym equipment, trainers and they got their own pool!
- George Castro trains fighters like Filipinos ONE FC Champions Brandon Vera and Mark Stiegl. Other fighter’s among his impressive resume: Dominick Cruz, Ross Pearson, Jeremy Stephens, and Chris Leben..
- He is currently the endorser for Bad Boy Philippines. They will be opening up a branch in the Philippines soon.
